The first section of the book provides general information about the machines and devices used in catering for mechanical processing of potatoes and vegetables, meat and fish, for making dough, washing dishes, and also characterized by lifting and transport equipment. The second section describes the heating and refrigeration equipment, the principles of the design and operation of fire, gas, steam and electric equipment. Thus, the book beautifully shows how Soviet cuisine was arranged and equipped at catering establishments - restaurants, cafes, public canteens at that time.
В первом разделе книги приводятся общие сведения о машинах и аппаратах, используемых в предприятиях общественного питания для механической обработки картофеля и овощей, мяса и рыбы, для приготовления теста, мытья посуды, а также характеризуется подъемно-транспортное оборудование. Во втором разделе рассказывается о тепловом и холодильном оборудовании, о принципах устройства и эксплуатации огневой, газовой, пароварочной и электрической аппаратуры. Таким образом книга прекрасно показывает как была устроена и оборудована советская кухня при предприятиях общественного питания - рестораны, кафе, общественные столовые в то время.
